Food on Friday (repost from 2012)
My small people love pineapple casserole and request it for every holiday meal, so I'll be making it again for Easter.
2-4 cans of pineapple chunks, well drained
1 C sugar
1/2 C flour
1 sleeve Ritz crackers, crushed
2 C grated cheddar cheese
1 stick butter, melted
Mix together sugar and flour. Mix with pineapple and put into greased casserole. Top with cheddar cheese. Sprinkle crackers over cheese and drizzle with melted butter. Bake at 350 for 30-40 minutes until golden brown.
